  • 1/2 cup apple sauce Look for unsweetened.
  • 1 large egg Binding agent.

Add-Ins

  • 1 cup diced apples Granny Smith preferred for tartness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line your muffin tin with paper liners or grease it lightly.
  • In a large mixing bowl, combine the flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Whisk together.
  • In another bowl, whisk together the Greek yogurt, sugar, apple sauce, and egg until creamy.
  • Pour the wet ingredients into the dry ingredients. Fold gently until just combined.
  • Fold in the diced apples.
  • Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 20 to 25 minutes until golden on top.
  • Let the muffins cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

Don't overmix to avoid tough muffins. Use fresh apples for the best flavor. Muffins can be frozen for up to two months.
