Ingredients
  

For the Soup Base

  • 1 tablespoon Butter or Olive Oil For sautéing the vegetables.
  • 1 large Onion (diced) Sweet and aromatic.
  • 2 large Carrots (peeled and sliced) Adds sweetness and color.
  • 4 cups Chicken Broth Homemade or store-bought.
  • 1-2 teaspoons Salt Adjust to taste.
  • 1 teaspoon Pepper Freshly ground is best.
  • 1 teaspoon Garlic Powder (or 4 cloves minced garlic) Add more if you love garlic.
  • 1/4 teaspoon Dried Thyme Pairs beautifully with the flavors.
  • 1/2-1 teaspoon Red Chili Flakes Optional for a bit of heat.

For the Main Ingredients

  • 16 ounces Gnocchi The star ingredient.
  • 2 cups Heavy Cream or Half-and-Half For creamy richness.
  • 2 cups Cheddar Cheese (grated) Sharp cheddar recommended.
  • 8-10 slices Crispy Chicken Bacon Cook until crispy.

Instructions
 

Preparation

  • Heat a large pot or Dutch oven over medium heat. Add the chicken bacon slices and cook until crispy. Remove bacon and set aside on a paper towel.
  • In the same pot, melt the butter or olive oil. Add diced onions and sauté until soft and translucent, about 5-7 minutes. Add sliced carrots and cook until slightly softened, around 3-4 minutes.
  • Pour in the chicken broth and season with salt, pepper, garlic powder, thyme, and chili flakes. Bring to a gentle simmer.
  • Add the gnocchi to the pot and cook until they float to the top, approximately 3-5 minutes.
  • Stir in the heavy cream and let it simmer for another 2-3 minutes until combined.
  • Remove from heat and stir in the grated cheddar cheese until melted.
  • Crumble the crispy bacon on top before serving.
  • Scoop the soup into bowls and enjoy!

Notes

Best when served immediately. For leftovers, store in an airtight container in the fridge for up to 3 days.
