  • 2 large eggs For binding; can substitute with a flaxseed egg for a vegan option.
  • 3 tablespoons Sriracha sauce Adjust for spiciness.
  • 1/2 cup mayonnaise Creamy base for the sauce.
  • 2 tablespoons honey Balances the heat.
  • 1 tablespoon lime juice Adds freshness.
  • 4 pieces brioche buns Soft, buttery texture.
  • to taste fresh lettuce and tomato slices Essential for crunch and freshness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Set up three bowls: one with seasoned flour, another with beaten eggs, and the last with panko breadcrumbs.
  • Coat each chicken breast in flour, then egg, then panko.

Cooking

  • Heat about half an inch of oil in a skillet over medium-high heat.
  • Fry the chicken for about 5-7 minutes on each side until golden brown.
  • In a bowl, mix together mayonnaise, Sriracha, honey, and lime juice until smooth.

Assembly

  • Spread sauce on both sides of the brioche buns.
  • Layer on lettuce and tomato slices, then add the fried chicken.
  • Drizzle with more sauce before topping with the bun.

Notes

Let the chicken rest for a couple of minutes after frying for juiciness. Use a meat thermometer to ensure chicken reaches 165°F (75°C) for doneness. Cook in batches to avoid overcrowding the skillet.
