Ingredients

Main Ingredients

  • 2 fillets Salmon (or substitute with halibut or trout if you wish)
  • 1 tablespoon Olive Oil (or avocado oil, especially great for high-heat cooking)
  • 1 teaspoon Garlic Powder (or fresh garlic—it really amps up the flavor)
  • 1 teaspoon Smoked Paprika (or regular paprika; use what you have!)
  • Salt & Black Pepper (to taste)
  • 1/2 cup Mayonnaise (or Greek yogurt for a lighter, tangy twist)
  • 1/4 cup Sweet Chili Sauce (the star of the show, balancing sweetness and heat perfectly)
  • 1-2 tablespoons Sriracha (adjust according to your spicy tolerance)
  • 1 tablespoon Honey/Maple Syrup (optional, but adds a lovely touch of sweetness)
  • 1 tablespoon Rice Vinegar/Lime Juice (or lemon juice if you’re in a pinch)
  • 2 tablespoons Chopped Green Onions (or cilantro if you fancy a twist)
  • 1 tablespoon Sesame Seeds (optional, but give that crunch we all crave)

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the salmon fillets dry with a paper towel, then drizzle olive oil over them and sprinkle with garlic powder, smoked paprika, salt, and pepper.
  • In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, honey/maple syrup, and rice vinegar/lime juice.
  • Generously coat the salmon fillets with the sauce and place them on a lined baking sheet.

Cooking

  • Bake the salmon for about 12-15 minutes until it is cooked through and flakes easily with a fork.
  • Let the salmon rest for a minute and then top with chopped green onions and optional sesame seeds before serving.

Serving

  • Serve with a side of rice or greens.

Notes

Always taste your sauce before you finalize it. Use half the amount of fresh garlic if substituting for garlic powder.
