Instructions
 

Cooking the Stew

  • In a large pot, heat the oil over medium-high heat. Add the beef chunks and sear until browned on all sides.
  • Add the chopped onion and minced garlic, sautéing until softened and golden.
  • Stir in the tomato paste, paprika, and curry powder, mixing well.
  • Pour in the beef broth, bring to a simmer, then cover and reduce the heat to let it bubble gently.
  • Let the stew cook for about an hour, stirring occasionally, until the beef is tender.

Cooking the Rice

  • In another pot, melt the butter over medium heat, add the rice and let it toast slightly.
  • Mix in the turmeric, then add 2 cups of water and a pinch of salt.
  • Bring to a boil, cover, and reduce the heat to low. Cook until the rice is fluffy, about 18-20 minutes.

Serving

  • Once the stew is ready, season with salt and pepper to taste, and serve over the fluffy yellow rice.
  • Pair with your favorite sides for a complete meal.

Notes

Don’t skimp on browning the beef for enhanced flavor. Allow plenty of simmering time for the best results.
