Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  • Add the softened butter, egg, and vanilla extract, mixing until combined.
  • Drop tablespoon-sized amounts of dough onto the prepared baking sheet, ensuring they are spaced apart.

Baking

  • Bake for 10-12 minutes, or until the edges are firm.
  • Allow the cookies to cool completely on the baking sheet.

Assembly

  • Once cooled, pipe or spread a layer of vanilla pudding on half of the cookies.
  • Top with the other half, creating a sandwich.
  • Drizzle or dip the tops in chocolate ganache and let set before serving.
