Main Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces Juicy, tender goodness.

Instructions
 

Preparation

  • Heat the vegetable oil in a large pan over medium heat.
  • Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and grated ginger, and sauté for another minute until fragrant.
  • Add the tomato paste, ground cumin, and chili powder. Cook for another minute.
  • Pour in the coconut milk and chicken broth, stir until well combined, and bring to a simmer.
  • Add lime juice, fish sauce, and brown sugar. Stir and adjust seasoning with salt and pepper.
  • Add the sliced bell peppers and chicken, then season with more salt and pepper.
  • Allow to simmer for 15-20 minutes until the chicken is cooked through and tender.
  • Sprinkle fresh cilantro over the top before serving.
  • Serve over cooked rice.

Notes

For best results, taste and adjust the seasonings as you go. This dish is great for leftovers and can be frozen.
