Buffalo Chicken Quesadilla

Ingredients
  

For the quesadilla

  • 2 cups cooked chicken, shredded Rotisserie chicken works great.
  • ½ cup buffalo sauce Adjust amount for desired spiciness.
  • 1 cup shredded cheese (cheddar or mozzarella) Sharp cheddar or your favorite cheese.
  • 4 large flour tortillas Can use whole wheat or corn tortillas.
  • ¼ cup ranch or blue cheese dressing (optional) For serving.
  • as needed oil or cooking spray for frying Just enough to coat the pan.

Instructions
 

Preparation

  • In a large bowl, toss shredded chicken with buffalo sauce until every piece is coated.
  • Heat a skillet over medium heat and add a splash of oil or some cooking spray.

Cooking

  • Place a tortilla in the skillet and layer half with the buffalo chicken mixture, then sprinkle with shredded cheese.
  • Cover with another tortilla.
  • Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook for another 3-4 minutes until cheese is melted and bubbly.
  • Remove from skillet, let rest for a minute, and slice into wedges.

Notes

Don't overload the quesadilla to prevent sogginess. Adjust the heat to prevent burning.
