Preparation

  • Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a medium bowl.
  • In a large bowl, cream together butter and both sugars until light and fluffy, about 3-5 minutes.
  • Add eggs one at a time, mixing well after each addition, followed by vanilla.
  • Gradually mix in the dry mixture until just combined, being careful not to overmix.
  • Fold in chopped apples and caramel bits.
  • Chill dough for at least 30 minutes or overnight in the fridge.
  • Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between.
  • Bake for 9-11 minutes or until edges are golden brown and centers are set.
  • Allow cookies to cool slightly before transferring to a wire rack.

Caramel Drizzle

  • In a small saucepan, combine heavy cream, corn syrup, sugar, butter, and salt over medium heat.
  • Stir constantly until melted and sugar dissolves, then simmer without stirring for 5-7 minutes or until thickened.
  • Let the caramel cool slightly before drizzling it over the cookies.
  • Allow caramel to set for at least 30 minutes before serving.

Notes

Chilling the dough is crucial for thicker cookies with softer centers. You can also substitute ingredients as needed, such as using coconut oil for butter for a dairy-free option.
