  • 1/2 cup crumbled goat cheese Chèvre is preferred for its smoothness.
  • 1/4 cup toasted walnuts, chopped Add a crunch factor.
  • Fresh thyme or rosemary, for garnish Enhances flavor and appearance.

Preparation

  • Preheat your oven to 200°C (400°F).
  • Peel and cube the sweet potatoes into bite-size pieces.
  • In a mixing bowl, toss the sweet potatoes with olive oil, maple syrup, salt, and black pepper until well coated.

Cooking

  • Spread the sweet potatoes on a lined baking sheet in an even layer.
  • Roast for about 25-30 minutes, stirring halfway through until tender and caramelized.
  • While roasting, toast walnuts in a hot, dry skillet for about 5 minutes until fragrant.
  • Once the sweet potatoes are done, transfer to a serving platter and top with crumbled goat cheese, toasted walnuts, and garnish with fresh herbs.
  • Serve warm and enjoy!

Notes

For best results, do not overcrowd the pan when roasting the sweet potatoes. Experiment with spices for added warmth.
