Preparation

  • Preheat your oven to 200°C (400°F).
  • Peel and chop the sweet potatoes into approximately 1-inch cubes.
  • In a large bowl, toss the sweet potato cubes with olive oil, honey, salt, black pepper, and optional cinnamon.

Cooking

  • Spread the sweet potatoes evenly onto a lined baking sheet without overcrowding.
  • Roast in the oven for 25-30 minutes, turning halfway through for even caramelization.
  • Once golden and caramelized, transfer the sweet potatoes to a serving plate.
  • Top with crumbled feta and chopped walnuts, drizzle with extra honey, and sprinkle with fresh herbs.
