Ingredients
  

Main Ingredients

  • 500 g chicken (preferably bone-in thigh pieces) Thigh pieces are preferred for their juiciness.
  • 1 tsp salt or to taste Essential for enhancing every ingredient.
  • 1 tbsp vinegar Regular white vinegar is typically used.
  • 2 tbsp oil (for frying) Vegetable oil or ghee recommended.
  • 1/4 cup water For creating a luscious sauce.
  • 1/2 tsp chicken powder Can be omitted for a cleaner ingredient list.

Green Cafreal Masala

  • 1 cup coriander leaves (with tender stems) Freshness is critical.
  • 4-5 cloves garlic Add flavor and aroma.
  • 1 inch ginger Adds warmth.
  • 2-3 pieces green chillies Adjust to taste for heat preference.
  • 1 tsp cumin seeds For depth and earthiness.
  • 1 tsp black peppercorns Adds a gentle heat.
  • 4-5 pieces cloves Brings world of flavor.
  • 1 inch cinnamon stick Sweetness that contrasts the heat.
  • 1 tsp turmeric powder For color and health benefits.
  • 1.5 tbsp vinegar For an additional tartness.
  • 1 tsp sugar To balance out flavors.

Instructions
 

Preparation of Marinating

  • Blend coriander leaves, garlic, ginger, green chillies, cumin seeds, black peppercorns, cloves, cinnamon stick, turmeric powder, vinegar, and sugar in a blender to make a fine paste.
  • In a bowl, add chicken pieces, sprinkle salt and vinegar, and mix. Let marinate for 10 minutes.
  • Add the green paste to the marinated chicken, mixing thoroughly and letting it marinate for 2-3 hours for best results.

Cooking

  • Heat 2 tablespoons of oil in a pan over medium-high heat.
  • Add the marinated chicken and masala to the pan, frying until the chicken turns golden brown.
  • Stir in water and chicken powder if using. Cover and let simmer for 10-15 minutes.

Serving

  • Garnish with onion rings and lemon wedges. Serve with roti or crusty bread.

Notes

Let marinate overnight for deeper flavor. Use a heavy-bottomed skillet for even cooking. Add vegetables while cooking for a healthy twist.
