  • 500 g Chicken Opt for pieces with bones for added flavor, or use boneless chicken for quick cooking.
  • 2 cups Basmati Rice Rinse and soak well.
  • 1 tsp Salt Enhances flavors.
  • 2 tbsp Ginger Garlic Paste Packs a flavor punch.
  • 100 g Curd Greek yogurt is a splendid substitute.
  • 1/2 tsp Turmeric Powder Adds color and health benefits.
  • 1 tsp Red Chilli Powder Adjust according to heat preference.
  • 1 tsp Coriander Powder Adds flavor.
  • 1/4 cup Oil For frying.
  • 1/4 cup Ghee Adds richness.
  • 3 Green Cardamoms Whole spices for flavor.
  • 2 Bay Leaves Bay Leaves Used in cooking.
  • 3 Cloves Cloves Adds aroma.
  • 2 Cinnamon Sticks Cinnamon Sticks For flavor.
  • 1 tsp Black Cumin Seeds Adds earthiness.
  • 2 Onions Onions Sliced thinly and caramelized.
  • 2 Tomatoes Tomatoes Adds acidity and sweetness.
  • 2 tbsp Chopped Coriander Leaves For freshness.
  • 2 tbsp Chopped Mint Leaves
  • 2 tbsp Methi Leaves or Kasuri Methi Adds a subtle bitterness.
  • 3 cups Water Necessary for rice.
  • 1 tsp Garam Masala Aromatic spice mix.
  • 1 tbsp Chicken Powder For extra flavor.
  • Juice of Half Juice of Half Lemon For a fresh uplift.

Instructions
 

Preparation

  • Rinse basmati rice 3-4 times until the water runs clear. Soak the rice in water for 30 minutes.
  • In a bowl, mix the chicken pieces with salt, ginger garlic paste, curd, turmeric, red chili powder, and half the lemon juice. Let marinate for about 30 minutes.

Cooking

  • In a heavy-bottomed vessel, heat oil and ghee.
  • Sauté bay leaves, cardamoms, cloves, cinnamon sticks, and black cumin seeds for about 30 seconds until fragrant.
  • Add sliced onions and cook until golden brown.
  • Stir in an extra tablespoon of ginger garlic paste and cook with onions. Then add chopped tomatoes and cook until mushy.
  • Add marinated chicken and cook on high for about 5 minutes.
  • Mix in chopped coriander, mint, and methi leaves.
  • Pour in water, stir gently, and adjust seasoning with garam masala, salt, and chicken powder.
  • Fold in soaked and drained basmati rice carefully.
  • Cover and cook for about 15 minutes until rice is tender. Allow to rest for 10 minutes after turning off the flame.

Serving

  • Serve hot, preferably with a side of cool raita.

Notes

Use fresh spices, and don't skip soaking the rice for fluffy grains. Leftovers taste even better the next day.
