Main Ingredients

  • 8 oz bittersweet chocolate, chopped Choose a high-quality chocolate for the best flavor.
  • 1/2 cup heavy cream Should be heavy for the best texture.
  • 1/2 cup fresh raspberries or raspberry puree Fresh is preferred; ensure it's not overly sugary.
  • 1 tsp vanilla extract Adds depth to the flavor.

Coating Ingredients

  • Cocoa powder or crushed nuts For coating the truffles.

Preparation

  • Heat the cream in a saucepan over medium heat until it simmers, but do not boil.
  • Remove the saucepan from heat and add the chopped chocolate. Stir until smooth.
  • Stir in the raspberry puree and vanilla extract until fully combined.
  • Cover the bowl with plastic wrap and chill the mixture in the fridge for about two hours until firm.
  • Once chilled, scoop small amounts of the mixture and roll them into balls.
  • Roll each truffle in cocoa powder or crushed nuts to coat.
  • Place the finished truffles on a baking sheet and refrigerate until ready to serve.

Notes

Truffles can be stored in an airtight container in the fridge for up to a week. These truffles can also be made ahead of time and frozen.
