  • Juice of 1 lime For freshness and zing!
  • 1 tablespoon ginger, grated Adds warmth.
  • 3 cloves garlic, minced Enhances flavor.

Instructions
 

Preparation of Rice

  • Rinse jasmine rice under cold water until the water runs clear.
  • In a pot, combine rinsed rice with 2 cups of water or broth. Bring to a boil, then reduce to low, cover, and simmer for about 15 minutes.

Cooking the Chicken

  • In a skillet, heat oil over medium heat.
  • Add grated ginger and minced garlic, sauté until fragrant.
  • Add cubed chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown.

Making the Coconut Sauce

  • Pour in coconut milk and chicken broth. Add fish sauce and brown sugar.
  • Stir and let it simmer for about 5-10 minutes until thickened slightly.

Final Touch

  • Stir in lime juice off the heat, adjust seasoning to taste.
