  • 1/4 cup green onions, chopped Adds freshness.
  • 1 piece egg, beaten Binds the mixture together.

Preparation

  • In a large mixing bowl, toss together the mashed potatoes, shredded cheese, green onions, beaten egg, salt, and pepper.
  • Form the mixture into small balls or patties, about the size of a golf ball.
  • Roll each ball in breadcrumbs for a crispy exterior.

Cooking

  • In a frying pan, heat enough oil over medium heat for the bites to float slightly.
  • Add the potato bites carefully to the oil, frying until golden brown on all sides, about 3-4 minutes per side.
  • Remove bites and let them drain on paper towels.

Notes

Don't overmix the potatoes to keep them fluffy. Experiment with cheese varieties and serve warm with a dipping sauce.
