  • 1 cup buttermilk Makes chicken extra moist. Substitute: milk with vinegar.
  • 1 cup all-purpose flour Gives chicken a crispy crust.
  • 1 teaspoon paprika Adds color and smokiness.
  • 1 teaspoon garlic powder For added flavor.
  • Salt and pepper Season generously.
  • Oil for frying Vegetable or canola oil.

For the Fries

  • 4 medium potatoes Russet potatoes are ideal for frying.
  • Seasoning for fries Salt, pepper, and any spices you like.

Preparation

  • Start by marinating the chicken in buttermilk. Soak overnight in the fridge for the best results.
  • Mix flour, paprika, garlic powder, salt, and pepper in a bowl to create the seasoned flour mixture.

Frying the Chicken

  • After marinating, remove excess buttermilk from the chicken and dredge it in the flour mixture, ensuring it's well-coated.
  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Fry chicken pieces in hot oil for 15-18 minutes until golden brown, ensuring not to crowd the pan.

Preparing the Fries

  • Peel and cut potatoes into evenly-sized fries. Rinse in cold water to remove excess starch.
  • Dry fries completely with a kitchen towel.
  • Fry the potatoes in batches until golden and crispy, around 5-7 minutes per batch. Drain and season immediately.

Serving

  • Serve crispy fried chicken alongside hot fries. Optionally, sprinkle with extra salt or serve with lemon.

Notes

For extra crunch, double-dip the chicken in buttermilk and flour mixture before frying. Always dry fries to prevent sogginess.
