  • 2 cups leftover mashed potatoes Ensure they are creamy, not too dry or too wet.
  • 1 cup shredded cheddar cheese Use sharp cheddar for bold flavor.
  • 2 large eggs Can substitute with flaxseed meal mixture.
  • 1/2 cup all-purpose flour Adjust quantity to ensure puffs are not dense.
  • 1 tsp salt Enhances potato flavor.
  • 1/2 tsp black pepper Adds a dash of spice.
  • 1 tsp garlic powder Gives an extra flavor boost.
  • 1 cup breadcrumbs Can substitute with crushed crackers or cornflakes.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix together the leftover mashed potatoes, shredded cheddar cheese, eggs, flour, salt, black pepper, and garlic powder until well combined.
  • Form the mixture into small balls, about the size of a golf ball.
  • Roll each ball in breadcrumbs until completely coated.
  • Arrange the balls on a parchment-lined baking sheet with space in between.
  • Bake for 20-25 minutes, or until golden brown and crispy.
  • Serve warm with your favorite dipping sauce.

Notes

Allow leftovers to cool before storing in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results. These puffs can also be frozen before baking for a quick meal later.
