  • 1/2 cup all-purpose flour Helps to firm up the mixture.

  • 1/2 tsp black pepper Adjust to taste.
  • 1 tsp garlic powder Adds savory flavor.
  • 1 cup breadcrumbs Creates a crunchy layer.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix together the mashed potatoes, shredded cheddar, eggs, flour, salt, pepper, and garlic powder until combined.
  • Grab a handful of the mixture and roll it into small balls, about the size of a golf ball.
  • Roll each ball in the breadcrumbs until fully coated.
  • Line a baking sheet with parchment paper and place the coated balls on the sheet, making sure they have space between them.

Baking

  • Bake for 20-25 minutes until golden brown.
  • Once baked, allow them to cool slightly before serving warm.

Notes

Don't overmix the potato mixture for best results. You can double-dip in breadcrumbs for extra crunch. Feel free to experiment with cheese and seasonings.
