  • 12 ounces penne or rotini pasta Can use either type.

Instructions
 

Preparation

  • Season the chicken breasts with Cajun seasoning, garlic powder, paprika, salt, and pepper.
  • Transfer the seasoned chicken into the crockpot.
  • Add the sliced bell peppers and onion into the crockpot.
  • Pour the chicken broth over the mixture.
  • Set the crockpot to low for 6-7 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks.
  • Add the cubed cream cheese and Parmesan into the crockpot and stir until creamy.
  • Let it cook on low for an additional 10-15 minutes.
  • Cook pasta in boiling water according to package directions, then drain.
  • Combine the drained pasta with the creamy sauce in the crockpot.
  • Serve with garnishes of fresh parsley and extra Parmesan cheese.

Notes

Best stored in an airtight container in the fridge for up to 3 days and is freezer-friendly. Can be reheated in the microwave.
