Preparation

  • Prep your ingredients: Slice the carrots thinly, chop the celery into bite-size pieces, and mince the garlic.
  • Layer it up: Place the chicken breasts in the bottom of the crockpot.
  • Add the good stuff: Layer the carrots, celery, minced garlic, and sprinkle the Italian seasoning on top.
  • Pour in the broth: Carefully pour the chicken broth over the ingredients.
  • Set it and forget it: Cook on low for 6-8 hours or high for 3-4 hours.
  • Add the gnocchi and greens: About 30 minutes before serving, stir in the gnocchi and spinach or kale.
  • The cream cheese finale: Mix in the cream cheese until smooth before serving.

Notes

For best results, don't skip the cream cheese, and use fresh gnocchi if possible. Leftovers can be stored for up to 3 days in the refrigerator.
