  • 2 tablespoons butter Adds creaminess and flavor to the dish.

For the Shrimp and Sausage

  • 1 pound shrimp Peel and devein; fresh preferred.
  • 1/2 pound sausage Smoked chicken or turkey sausage recommended.
  • 2 tablespoons hot sauce Adjust to taste; start small.
  • 2 eggs eggs Optional, for serving.

Preparation of Grits

  • In a large pot, bring water or chicken broth to a rolling boil.
  • Slowly whisk in the grits while stirring continuously to avoid lumps.
  • Reduce heat to low and simmer for about 20-25 minutes until thick and creamy.
  • Stir in the cheese and butter until melted. Season with salt and pepper to taste.

Cooking the Shrimp and Sausage

  • In a skillet over medium heat, cook sliced sausage until browned and crispy.
  • Add the shrimp to the skillet and cook until pink and opaque.
  • Optionally, you can add minced garlic to enhance the flavor.

Assembly

  • Scoop cheesy grits into bowls, topping with shrimp and sausage.
  • If using, add a fried egg on top and drizzle with hot sauce.
