Ingredients
  

Main Ingredients

  • 16 ounces Fresh Mozzarella Balls (Bocconcini or Ciliegine) Pat them dry before using.
  • 1/2 cup Pimiento-Stuffed Green Olives Use for the iris of the eyeball.
  • 1/4 cup Black Olives (pitted) These create the pupils.
  • 2 tablespoons High-Quality Olive Oil Helps everything stick together.

Optional Ingredients

  • to taste Paprika or Red Food Coloring Gel For bloodshot effect.
  • to taste Fresh Basil Leaves or Arugula for Garnish For added freshness and color.

Instructions
 

Preparation

  • Create a clean and dry workspace. Drain mozzarella balls and pat them dry.
  • Slice each pimiento-stuffed olive into thin, round pieces for the iris.
  • Use a straw to punch out small circles from the black olives for pupils.

Assembly

  • Press one olive slice onto the front of each mozzarella ball.
  • Dab olive oil on the back of the black olive pupils and place them in the center of the green olive slice.
  • For bloodshot eyes, use a clean toothpick to draw thin lines with red food coloring or paprika.

Chilling

  • Arrange the assembled Eyeball Mozzarella Bites on a platter and chill in the fridge for at least 15-30 minutes.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. These bites are best made fresh, but they can be assembled the night before.
