  • 1 tsp Carrom Seeds (Ajwain) Enhances the fish's taste.
  • 2 tbsp Chickpea Flour Helps achieve crunchy texture.
  • 2 tbsp Cornflour Aids in creating the ideal crunch.
  • 1 tbsp Juice of Half Lemon Brightens the dish.
  • 1 pinch Orange Red Food Color Adds visual appeal; optional.
  • 1 cup Water Used to bind the marinade.
  • Oil for frying Neutral Oil for Deep Frying Choose an oil that withstands high heat.

Instructions
 

Preparation

  • Gather all the ingredients in an organized manner.
  • In a mixing bowl, combine all the marinade ingredients: degi mirch, turmeric powder, kashmiri red chili powder, salt, ginger garlic paste, carrom seeds, chickpea flour, cornflour, lemon juice, food color, and water. Mix until evenly combined.
  • Marinate the surmai fish fillets in the mix, ensuring each piece is well-coated. Let it sit for at least 30 minutes.
  • Heat the oil in a deep frying pan over medium-high heat. Test the temperature with a drop of batter; if it sizzles, the oil is ready.

Cooking

  • Fry the marinated fillets carefully in the hot oil, ensuring not to overcrowd the pan. Cook for about 2-3 minutes on each side until golden brown.
  • Once cooked, remove the fish from the oil and place on a paper towel-lined plate to absorb excess oil.

Serving

  • Garnish the fish fry with a slice of lemon and chopped cilantro before serving.

Notes

For best results, ensure to use fresh surmai fillets and adjust seasoning according to taste. Store leftovers in an airtight container for up to 2-3 days.
