  • 1 lb cod fillets Fresh is best, but frozen works too.
  • 2 tbsp soy sauce Low-sodium preferred.
  • 1 tbsp rice vinegar Can substitute with apple cider vinegar.
  • 1 tbsp honey Wildflower honey is great for flavor.
  • 1 tbsp brown sugar For caramelization.
  • 1 tsp sesame oil Enhances flavor with a nutty aroma.
  • 1 inch ginger root, grated Fresh ginger is essential.
  • 2 cloves garlic, minced Always use fresh.
  • 1 tbsp vegetable oil Any neutral oil will work.
  • 2 pieces green onions, sliced For garnish.
  • 1 tsp sesame seeds Optional, for garnish.
  • to taste salt and pepper Season generously.

Instructions
 

Preparation

  • Pat the cod fillets dry with paper towels and season both sides with salt and pepper.

Mix the Glaze

  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, brown sugar, sesame oil, grated ginger, and minced garlic.

Cook the Cod

  • Heat vegetable oil in a large skillet over medium heat until shimmering.
  • Add the cod fillets and cook undisturbed for 3 to 4 minutes, until the underside is golden brown.
  • Flip the cod gently, pour the ginger soy glaze over the top, cover, and cook for another 2 to 3 minutes until the fish flakes easily with a fork.

Serve

  • Remove the cod with a slotted spatula and transfer it to a serving plate. Spoon any remaining glaze over the top and garnish with sliced green onions and sesame seeds.

Notes

Tips include using fresh fish, monitoring heat levels, and avoiding overcooking.
