Chicken Preparation

  • 1 kg Bone-in chicken pieces (legs, thighs, wings) Choose your preferred cut.
  • 1 tsp Salt A generous pinch to enhance the flavor.
  • 1 tsp Freshly ground pepper For that spicy kick.
  • 1 tsp Garlic powder Essential for flavor.
  • 1 tsp Onion powder Adds a hint of sweetness.
  • 1 tsp Paprika For color and smokiness.
  • 2 large Eggs To be whisked for the egg wash.
  • 1 cup Flour For the crispy coating.
  • 1 cup Oil for frying (canola or peanut oil) A high smoke point oil is preferred.

Preparation

  • Season the chicken by placing pieces in a bowl and sprinkling generously with salt, pepper, garlic powder, onion powder, and paprika. Let it marinate for at least 30 minutes.
  • Prepare the egg wash by whisking the eggs in a separate bowl until frothy.
  • In another bowl, combine flour with a bit more salt and pepper for coating.

Cooking

  • Heat oil in a frying pan over medium heat until it reaches around 350°F.
  • Coat each piece of chicken first in the egg wash, then in the seasoned flour.
  • Carefully add coated chicken pieces to the hot oil without overcrowding the pan.
  • Fry for about 15-20 minutes, turning occasionally, until the chicken is golden brown and cooked through.
  • Transfer fried chicken to a plate lined with paper towels to drain excess oil.

Notes

Let the chicken rest for a few minutes after frying to redistribute juices. Store leftovers in an airtight container in the fridge for 3-4 days. For reheating, using the oven preserves crispiness.
