Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, coat chicken breasts with olive oil, oregano, salt, and pepper.
  • Place the seasoned chicken on a baking sheet.
  • Toss sliced apples and mixed veggies with a dash of olive oil, salt, and pepper in another bowl.
  • Spread the apples and veggies around the chicken on the baking sheet.

Cooking

  • Roast everything in the oven for about 25-30 minutes or until the chicken is cooked through.
  • Prepare quinoa or rice as per package instructions.

Assembly

  • Assemble your bowl starting with quinoa or rice, then add roasted chicken, veggies, and apples.
  • Top with pecans and feta cheese if desired.

Notes

Let chicken marinate for 30 minutes for enhanced flavor. Use parchment paper for easier cleanup.
