  • 1 lemon, juiced Use fresh lemon juice for best results.
  • Salt and pepper to taste Seasoning is crucial.

For Serving

  • Olives Kalamata or any variety Add for flavor.
  • Vegetables (e.g., tomatoes, cucumbers, bell peppers) Use seasonal and vibrant options.

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine olive oil, garlic powder, oregano, lemon juice, salt, and pepper.
  • Add chicken cubes and mix well to coat. Let marinate for at least 30 minutes.

Prepare the Grill

  • Preheat grill to medium-high and soak wooden skewers in water if using.

Skewering Chicken

  • Thread marinated chicken onto skewers, ensuring they are not packed too tightly.

Grill the Chicken

  • Grill skewers or chicken pieces for about 4-5 minutes on each side until golden brown and cooked through.

Assemble the Board

  • Arrange grilled chicken on a large wooden board, scatter feta cheese, olives, and fresh veggies around, and add warm pita bread.
  • Drizzle with olive oil if desired and serve.
