For the Veggies

  • 1 bell peppers, chopped Any color; mix for variety.

For the Toppings

  • 1 cup feta cheese, crumbled The star of the show.

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat and sauté minced garlic until fragrant.
  • Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side.

Assembly

  • In a bowl, mix chopped bell peppers, cucumbers, and cherry tomatoes.
  • Combine the cooked shrimp with the mixed vegetables.
  • Crumble feta cheese over the mixture and drizzle with lemon juice.
  • Garnish with fresh parsley and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat on the stovetop for best texture.
