Ingredients
  

For the Grilled Meat

  • 2 pounds Assorted meats (beef, chicken, sausage) Chicken thighs recommended for juiciness.
  • 3 tablespoons Olive oil Can substitute with any preferred cooking oil.
  • 1 teaspoon Salt To enhance flavor.
  • 1 teaspoon Black pepper For seasoning.
  • 1 teaspoon Garlic powder Adds depth of flavor.
  • 1 tablespoon Fresh thyme Optional; can use dried.
  • 1 tablespoon Fresh rosemary Optional; can use dried.

For the Pap

  • 1 cup Maize porridge Served as a comfort food side.
  • 2 cups Water For cooking the pap.

For the Vibrant Sides

  • 2 cups Grilled vegetables (bell peppers, zucchini, onions) Season with olive oil and herbs before grilling.
  • 1 cup Coleslaw For a fresh, crunchy addition.
  • 1 cup Fresh salad Choose colorful ingredients for a vibrant side.

Instructions
 

Preparation

  • In a large mixing bowl, combine assorted meats with olive oil, salt, black pepper, and garlic powder. Massage the seasoning into the meat and let it marinate for at least 30 minutes while preheating the grill to medium-high.
  • Prepare the pap by boiling water in a pot and gradually adding the maize porridge, stirring continuously until it thickens. Avoid clumps.

Grilling

  • Once the grill is hot, place the marinated meats on it, grilling them until cooked through. Chicken should reach 165°F internally while beef can be cooked to your preference.
  • For the grilled vegetables, toss them in olive oil, salt, and herbs, and grill until tender and slightly charred.

Serving

  • Serve a generous portion of pap on each plate, adding the grilled meats and colorful sides to create a beautiful feast.

Notes

Allow the grilled meat to rest for a few minutes before slicing to retain juices. Drizzle lemon juice over everything before serving for extra flavor.
