Main Ingredients

  • 500 g chicken (bone-in preferred) Bone-in chicken adds moisture and depth of flavor.
  • 2 tbsp oil or mustard oil Mustard oil brings a unique flavor characteristic of traditional recipes.
  • 2 medium onions, finely sliced Sauté until golden brown for sweet, rich flavor.
  • 2 medium tomatoes, chopped Fresh tomatoes are best, canned works in a pinch.
  • 1 tbsp ginger garlic paste Sets the stage for flavor fireworks.
  • 2 green chilies (slit) Adjust spice level to taste.
  • 1/2 tsp turmeric powder Provides earthy flavor and stunning color.
  • 1 tsp red chili powder Adds a kick—adjust to preference.
  • 1 tsp coriander powder Brings fragrance and warmth.
  • 1/2 tsp cumin powder Adds a deep, toasted note.
  • to taste none Salt Basic necessity.
  • 1/2 tsp garam masala Add towards the end for final flavor elevation.
  • to garnish none Fresh coriander leaves For color and fresh taste.
  • 1-1.5 cups Water Adjust for desired sauciness.

Instructions
 

Cooking

  • Grab a kadai or heavy-bottomed pan, and heat oil. Add the sliced onions and sauté until golden brown.
  • Add ginger garlic paste and green chilies, sauté for 1-2 minutes until the raw smell disappears.
  • Toss in chopped tomatoes and cook until soft and mushy.
  • Add turmeric, red chili powder, coriander, cumin, and salt. Stir and cook until oil separates from the masala.
  • Add chicken and sauté on medium-high heat for 6-8 minutes until coated with masala.
  • Add water, cover, and reduce heat to low. Simmer for 25-30 minutes until chicken is tender and curry thickens.
  • Before serving, sprinkle garam masala and simmer for 2 more minutes.
  • Garnish with freshly chopped coriander leaves and serve.

Notes

Sauté onions until golden brown. Taste and adjust spices as needed. Leftover curry tastes even better!
