  • 4 oz feta cheese, crumbled High-quality sheep’s milk feta is recommended.
  • 1 cup walnuts, chopped Toast lightly for enhanced flavor.
  • 4 cups mixed greens A mix like baby spinach and arugula works well.

Vinaigrette Ingredients

  • 1/4 cup olive oil Extra virgin olive oil is recommended.
  • 2 tablespoons honey Local honey is preferred for added flavor.
  • 1 tablespoon Dijon mustard Adds tanginess to the dressing.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Gather all ingredients.
  • Wash the apples and mixed greens under cold water, then dice the apples into bite-sized chunks.
  • In a large bowl, combine the diced apples and mixed greens.
  • Crumble the feta cheese over the top of the salad.
  • Chop and add walnuts (toast them if desired).

Dressing

  • In a small bowl, whisk together olive oil, honey, Dijon mustard, salt, and pepper until well combined.

Tossing and Serving

  • Drizzle the vinaigrette over the salad and gently toss to combine.
  • Serve immediately or let it chill in the fridge for about 30 minutes for enhanced flavor.
