Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Slice the zucchini into rounds and toss with 1 tbsp olive oil, salt, and pepper.

Roasting

  • Spread zucchini slices on a baking sheet and roast for about 20 minutes.

Cooking Orzo

  • Boil water and cook orzo according to package instructions (about 8-10 minutes), then drain and set aside.

Cooking Chicken

  • In a skillet, heat remaining olive oil over medium heat. Add cubed chicken and cook until golden and cooked through (6-8 minutes).

Adding Sauce

  • Drizzle hot honey over cooked chicken and stir to coat.

Assembly

  • In serving bowls, layer orzo, top with honey chicken, roasted zucchini, and sprinkle fresh herbs.

Notes

Store leftovers in airtight containers for up to 3-4 days. Can reheat in the microwave or skillet.
