Ingredients

  • 1 cup breadcrumbs (Italian seasoned preferred) For a crispy, flavorful crust.

  • 1 tsp garlic powder A little punch of flavor.
  • to taste Salt & black pepper Enhances flavors.
  • 3 tbsp olive oil, for pan-frying Adds richness and helps get that golden crust.

For the Tomato Mixture

  • 2 cups cherry tomatoes, halved Sweet and juicy.
  • 1 tbsp olive oil For the tomato mixture.
  • 1 clove garlic, minced Elevates the dish.
  • 1 tbsp balsamic glaze Brings everything together.
  • 1 cup fresh basil leaves, chopped Adds freshness.

For the Burrata Drizzle

  • 1 ball burrata cheese The creamy topping.
  • 1 tbsp heavy cream or milk Helps whip the burrata into a smooth drizzle.
  • 1 tsp olive oil Adds richness.
  • 1 pinch salt To taste.

Instructions
 

Preparation

  • Slice the chicken breasts in half lengthwise and pound to an even thickness of about a half-inch.
  • Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.

Cooking the Chicken

  • Heat 3 tablespoons of olive oil in a skillet over medium heat until hot.
  • Dip each chicken cutlet in flour, then the beaten eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
  • Cook the chicken cutlets for 3–4 minutes per side until golden brown and cooked through. Transfer to paper towels to drain.

Making the Tomato Mixture

  • In a separate pan, heat 1 tablespoon of olive oil and sauté minced garlic until fragrant (about 30 seconds).
  • Add halved cherry tomatoes, a pinch of salt and pepper, and cook for 3–4 minutes until they blister. Drizzle with balsamic glaze and add fresh basil.

Preparing the Burrata Drizzle

  • Blend burrata with heavy cream or milk and 1 teaspoon of olive oil until smooth and pourable. Season with salt.

Serving

  • Place chicken cutlets on plates, top with the tomato mixture, and drizzle with the burrata sauce. Garnish with extra basil.

Notes

Use fresh ingredients for best results. Avoid overcrowding the frying pan and adjust seasoning to taste.
