Ingredients
  

For the Dough

  • 3.5 cups all-purpose flour Feel free to use half whole wheat flour for an earthier taste.
  • 2.25 teaspoons active dry yeast Use a fresh packet for best results.
  • 1 tablespoon sugar Helps the yeast bloom.
  • 1.5 teaspoons salt Enhances flavor.
  • 1 cup warm water (110°F) Too hot will kill the yeast.
  • 3 tablespoons olive oil Adds richness to the dough.
  • 4 tablespoons butter Softened, ideally unsalted.
  • 3 cloves garlic Minced for flavor.
  • 1.5 tablespoons dried Italian herb blend A mix of oregano, thyme, and basil.
  • 1 cup shredded mozzarella cheese For gooey texture.
  • 0.5 cups grated parmesan cheese For added flavor and crust.
  • 2 tablespoons fresh parsley Chopped for freshness.

For the Herb Butter

  • 4 tablespoons butter Softened, mix with garlic and herbs.
  • 3 cloves garlic Minced for the herb butter.
  • 1.5 tablespoons dried Italian herb blend Mix into the butter.

Instructions
 

Bloom the Yeast

  • In a large bowl, combine warm water, sugar, and yeast. Stir gently and let sit for about 5 minutes until frothy.

Mix the Dough

  • Add olive oil, 3 cups of flour, and salt to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms.

Knead the Dough

  • Flour your surface, then dump the dough onto it and knead for 6-8 minutes until smooth and elastic, adding more flour if necessary.

First Rise

  • Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, until doubled in size.

Make the Herb Butter

  • Mix softened butter with minced garlic and dried Italian herbs.

Roll and Fill

  • Once risen, punch down the dough. Roll it out into a 12×18 inch rectangle, spread the herb butter, and sprinkle with cheeses and parsley.

Shape the Loaf

  • Starting from the long side, roll the dough tightly into a log and pinch the seam to seal.

Second Rise

  • Place the rolled dough in a greased 9×5 inch loaf pan, cover, and let rise for another 30-45 minutes.

Bake

  • Preheat oven to 375°F. Bake for 30-35 minutes until golden brown and sounds hollow when tapped.

  • Let the bread cool slightly before slicing. Serve warm with olive oil for dipping.
