  • 4 tablespoons olive oil Adds moisture and helps the seasoning stick.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, mix together 4 tablespoons of olive oil, the zest and juice of the lemons, lemon pepper seasoning, and salt until combined.
  • Rub the mixture all over the Cornish game hens, making sure to get in between the skin and the meat.

Cooking

  • Place the hens in a roasting pan, breast side up, and roast for about 50-60 minutes, checking for an internal temperature of 165°F (74°C).
  • Once cooked, remove the hens and let them rest for about 10 minutes.
  • Garnish with fresh herbs and serve.

Notes

For best results, always use a meat thermometer to check doneness. Consider stuffing the cavity with lemon halves or fresh herbs before roasting for added flavor. Ensure the hens are patted dry before seasoning to get crispy skin.
