Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In another bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • Mix in the milk and mango purée until well combined.
  • Slowly add the dry ingredients into the wet mixture and stir until just combined.

Baking

  • Fill the cupcake liners about ¾ full and bake for 18–20 minutes.
  • Allow the cupcakes to cool completely.

Filling and Frosting

  • Fill each cooled cupcake with strawberry jam using a piping bag or knife.
  • In a clean bowl, beat the butter for the frosting until creamy, then gradually add powdered sugar.
  • Mix in heavy cream and vanilla extract.
  • Divide the frosting into three bowls for color mixing.
  • Using a piping bag, create a sunset swirl on top of each cupcake with the colored frosting.

Serving

  • Top each cupcake with a small slice of strawberry or mango for decoration.

Notes
