  • 1 cup sun-dried tomatoes (chopped) Don't grab the ones in oil unless you want an overly oily sauce.
  • 1 cup heavy cream Consider substituting half-and-half for a lighter version.
  • 1 cup parmesan cheese (grated) Grate your own if possible for better flavor.
  • 2 cups pasta of your choice Penne or fettuccine works well; check cooking time.
  • 2 tablespoons olive oil Extra virgin olive oil is recommended.
  • to taste salt Essential for elevating flavors.
  • to taste pepper Essential for elevating flavors.
  • 1 bunch fresh basil For garnish, adds freshness to the dish.

Preparation

  • Heat olive oil in a large pan over medium heat.
  • Season chicken breasts with salt and pepper; brown on both sides, then set aside.
  • In the same pan, cook sun-dried tomatoes for 2 minutes.
  • Stir in heavy cream, and bring to a simmer.
  • Add grated parmesan cheese, and stir until smooth.
  • Cook pasta as per package instructions, drain, and combine with sauce.
  • Slice cooked chicken and arrange on top of pasta.
  • Garnish with fresh basil and serve.

Notes

This dish is customizable; you can switch out the pasta, try different types of cheeses, or toss in some extra veggies.
