Mutton Rogan Josh & Saffron Rice

Ingredients
  

For Mutton Rogan Josh

  • 3 tbsp Mustard Oil For cooking
  • 1 tsp Cumin Seeds Whole spices
  • 3 pieces Green Cardamoms Whole spices
  • 4 pieces Cloves Whole spices
  • 1 piece Black Cardamom Whole spices
  • 1/2 tsp Asafoetida For flavor
  • 500 g Mutton (cut into pieces) Don't skimp on the meat!
  • Salt to taste Salt Because who wants bland?
  • 1 tbsp Kashmiri Red Chilli Powder For color and flavor
  • 1/2 tsp Ginger Powder For flavor
  • 1/2 tbsp Fennel Powder For flavor
  • 1/2 Cup Curd (whisked) Homemade tastes best
  • 1/2 tsp Garam Masala Final seasoning
  • 300 ml Water For cooking

For Saffron Rice

  • 1 cup Gobindobhog rice (or basmati) Your choice!
  • 2-3 tbsp Ghee Or oil if you're feeling cheeky
  • 1 piece Bay leaf For flavor
  • 3 pieces Green Cardamom pods Whole spices
  • 3 pieces Cloves Whole spices
  • 1 inch Cinnamon stick For flavor
  • 2 tbsp Cashews For crunch
  • 1.5 tbsp Raisins Add a sweet surprise!
  • 1.5 tbsp Sugar Adjust for sweetness
  • Salt to taste Salt To taste
  • A pinch Saffron strands Totally optional, but glam!
  • 1/4 tsp Turmeric powder For color
  • 2 cups Water For cooking
  • 1/4 cup Green peas Optional, but colorful!

Instructions
 

Making Mutton Rogan Josh

  • Heat the mustard oil in a heavy-bottomed vessel until it reaches its smoking point.
  • Toss in the cumin seeds, green cardamom, cloves, and black cardamom.
  • Add the mutton and cook on medium to high flame for 2-3 minutes.
  • Sprinkle the salt and Kashmiri red chili powder; mix it in and let it sizzle for another 2 minutes.
  • Add ginger and fennel powders and give it a good stir.
  • Mix in the whisked curd and cook until oil separates.
  • Add garam masala and pour in the water; bring to a boil.
  • Cover with a plate and simmer, adding water as necessary until the mutton is tender.

Cooking the Saffron Rice

  • In another heavy-bottomed pan, heat the ghee.
  • Add bay leaf, green cardamom, cloves, and cinnamon.
  • Toss in cashews and fry until golden; add raisins and cook until puffed.
  • Add the soaked and drained rice and sauté for 2-3 minutes.
  • Mix in turmeric, salt, and sugar. Add saffron soaked in warm milk if using.
  • Pour in the water and add green peas; bring to a boil.
  • Cover and cook on low flame for 12-15 minutes or until fluffy.
  • Fluff the rice gently with a fork after cooking.

Notes

Cooking is about patience and quality ingredients. Feel free to adjust spices to your taste.
