One-Pan Sausage Tomato Spaghetti

Ingredients
  

Pasta and Sauce Base

  • 180–200 g spaghetti Opt for whole wheat or gluten-free if needed; cook until just shy of al dente.
  • 250 g sausage Italian or chicken sausage, sliced for even cooking.
  • 2 cups cherry tomatoes, halved These will burst with flavor during cooking.
  • 3 cloves garlic, minced More garlic equals more flavor!
  • 2 tbsp olive oil Extra virgin for richness.
  • 2 tbsp tomato paste Optional for a richer sauce.
  • 1 cup pasta water, reserved Essential for making the sauce cling to the spaghetti.
  • 1 tsp sugar Balances the acidity of the tomatoes.
  • Salt & pepper to taste Always season with love.
  • Chili flakes to taste For a spicy kick.
  • Chopped scallions or basil (optional) For garnish.
  • Grated Parmesan (optional) Adds creaminess.

Instructions
 

Cooking

  • Bring a large pot of salted water to a boil and cook the spaghetti until just shy of al dente. Reserve pasta water.
  • Heat olive oil in a large pan over medium heat, then add sausage slices and sear until browned, about 4-5 minutes. Remove and set aside.
  • In the same pan, sauté minced garlic for 30 seconds, then add cherry tomatoes and a pinch of salt until they burst and soften. Stir in the tomato paste (if using) and sugar.
  • Return sausage to the pan and add cooked spaghetti, tossing together with a splash of reserved pasta water.
  • Season with black pepper and chili flakes, and garnish with scallions or basil if desired.
  • Serve warm, optionally topped with grated Parmesan.

Notes

For best results, don't skip the seasoning, and feel free to experiment with your favorite veggies. Store leftovers in an airtight container for up to three days.
