Preparation

  • In a large pot, add olive oil over medium heat.
  • Add the Italian sausage and break it up with a spoon as it browns.
  • Once browned, add chopped onion and minced garlic; sauté until softened.
  • Pour in the chicken broth and add diced tomatoes. Stir and bring to a gentle simmer for about 5 minutes.
  • Add the ditalini pasta and cook according to package instructions until al dente.
  • Fold in the chopped kale or spinach until wilted.
  • Remove from heat and stir in the grated Parmesan cheese until creamy.
  • Season with salt and pepper to taste before serving.

Notes

For best results, use a local butcher for sausage and fresh herbs for garnish. This soup can be frozen for up to three months.
