Ingredients
  

For the Brie Bites

  • 1 small wheel small wheel of brie cheese, cut into 1-inch cubes Choose a wheel that isn’t too ripe.
  • 1/2 cup finely chopped pistachios Provides a crunchy texture.
  • 1 sheet of puff pastry, thawed Store-bought puff pastry is recommended.
  • 1/4 cup raspberry jam Adds sweetness and tartness.
  • 1 tablespoon honey For drizzling over the bites.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Roll out the puff pastry until it’s about 1/8 inch thick on a floured surface.
  • Cut the dough into 3-inch squares.
  • Place a cube of brie in the center of each square and sprinkle with chopped pistachios.
  • Fold the corners over the cheese to create a pouch and pinch to seal.
  • Arrange the bites on a parchment-lined baking sheet.

Baking

  • Bake for 15-20 minutes, or until golden brown.
  • In a small saucepan, combine raspberry jam and honey over low heat until smooth.
  • Drizzle the raspberry honey glaze over the baked brie bites before serving.

Notes

Store leftovers in an airtight container in the refrigerator and reheat in the oven at 350°F (175°C) for about 10 minutes.
