For the Fish

  • 2 medium-sized pomfrets, cleaned and slit Look for fresh pomfrets that smell like the ocean.
  • 1 tsp turmeric powder Adds vibrant color and nutty depth.
  • 1 tbsp red chili powder Adjust spice levels as desired.
  • 1 tbsp ginger-garlic paste Essential for aromatic flavor.
  • 1 tsp coriander powder Adds subtle citrusy flavor.
  • 1 tsp cumin powder Contributes an earthy flavor.
  • 1 tsp garam masala Aromatic spice blend.
  • 1 tbsp lemon juice Adds zing and balances richness.
  • to taste none Salt Essential seasoning.
  • 2 tbsp rice flour For crispiness during frying.
  • 1 tbsp semolina (rava) Adds crunch factor.
  • 2 tbsp oil Essential for shallow frying.

Instructions
 

Cleaning and Preparing the Fish

  • Clean the Pomfrets thoroughly, giving them a good rinse.
  • Make small cuts on both sides of the fish to allow the marinade to penetrate.

Marinating the Fish

  • In a bowl, combine turmeric powder, red chili powder, ginger-garlic paste, coriander powder, cumin powder, garam masala, lemon juice, and salt. Mix until creamy.
  • Generously slather the marinade over the pomfrets, ensuring it gets into the cuts.
  • Let the fish marinate for at least 30 minutes, preferably 1 hour.

Frying the Fish

  • Combine rice flour and semolina on a plate. Coat the marinated fish lightly with this mixture.
  • Heat oil in a frying pan over medium flame until shimmering.
  • Gently place the fish in the hot oil and fry for about 4-5 minutes until golden brown.
  • Flip the fish and repeat until perfectly crispy.
  • Drain on paper towels to remove excess oil.

Serving

  • Serve hot with onion rings, lemon wedges, and green chutney.

Notes

For best results, marinate longer and maintain consistent oil temperature. Experiment with spices or side dishes like salad or naan.
