Cooking

  • In a large pot, cook the sausage over medium heat until browned, about 5-7 minutes.
  • Add the chopped onion and sauté for 3-4 minutes until translucent.
  • Stir in the diced potatoes and chicken broth, and bring to a boil.
  • Reduce heat and let simmer for 15-20 minutes until potatoes are fork-tender.
  • Add corn and heavy cream, stirring until heated through, adjusting seasoning with salt and pepper.
  • Serve warm, garnished with chives or parsley.

Notes

To enhance your chowder, consider mashing some potatoes against the pot for a thicker texture. Add smoked paprika or cayenne for extra flavor.
