Ingredients
  

Spice Mix

  • 1 tsp Cumin Seeds Adds a warm, earthy flavor.
  • 15 corns Black Pepper Brings a spicy kick.

  • 3 pcs Green Cardamoms Adds floral hints.
  • 1 pc Black Cardamom Provides depth.
  • 1/2 pc Mace Lends a delicate flavor.
  • 1/4 tsp Turmeric Powder Adds color and warm flavor.
  • 1 tsp Degi Mirch Blend of spice and color.
  • 1/2 tbsp Coriander Powder Balances the taste.
  • 1/2 tsp Cumin Powder Adds aromatic lift.
  • 1 tsp Kashmiri Red Chilli Powder Provides heat without overpowering.

Main Ingredients

  • 1/2 Cup Oil For frying; use sunflower or canola.
  • 3 pcs Potatoes Absorb sauce and add flavor.
  • 3 pcs Onions Base of flavor; fry until golden.
  • 500 g Mutton Primary protein, can substitute with beef or chicken.
  • 1/2 Cup Curd Adds creamy texture.
  • 2 pcs Bay Leaves Provides woodsy aroma.
  • 1 tbsp Ginger Garlic Paste Essence of savory flavor.
  • 1/2 tbsp Salt Adjust to taste.

For Cooking

  • 2 tbsp Water (for cooking masalas) Keeps things moist.
  • 2 Cups Water (or as per desired consistency) Adjust for thickness.
  • 6-7 pcs Slitted Green Chillies For extra heat.
  • 1 bunch Chopped Coriander For garnish.

Instructions
 

Preparation

  • Start with the Spice Mix: Grind the cumin seeds, black peppercorns, cloves, green cardamoms, black cardamom, and mace into a fine powder.
  • Heat up oil in a pan and fry potato cubes until golden brown.
  • Fry thinly sliced onions in the same oil until lightly golden.
  • Blend the fried onions with curd until smooth.

Cooking

  • In the same oil, add bay leaves and mutton pieces; fry until browned.
  • Stir in ginger garlic paste and cook for 2 minutes.
  • Season with salt and ground spice mix, adding a little water; cook until oil separates.
  • Incorporate the onion-curd paste and continue cooking.
  • Pour in 2 cups of water, adjusting for desired thickness.
  • Transfer to a pressure cooker; cook until the first whistle, then simmer for 10-12 minutes.
  • Add fried potatoes, close the lid, and cook for one more whistle.

Final Touches

  • Before serving, add slitted green chillies and chopped coriander for freshness.

Notes

For best results, use fresh ingredients, fry onions deeply, and don’t rush cooking. Perfect for meal prep and tastes better the next day. Can be made in advance and stored well.
