Preparation

  • Mince the garlic and halve the cherry tomatoes; set them aside.

Cooking Chicken

  • Heat olive oil in a large skillet over medium-high heat until hot.
  • Season the chicken breasts generously with salt, pepper, paprika, and thyme, rubbing the spices into the chicken.
  • Place the seasoned chicken into the skillet and cook for about 6-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest.

Making the Sauce

  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Add the halved cherry tomatoes, honey or maple syrup, and lemon juice. Stir everything together.
  • Cook until the tomatoes start to soften and burst, creating a sauce.

Finishing Up

  • Nestle the chicken back into the pan and spoon the sauce over it. Let it simmer for a minute.
  • Plate up the chicken and garnish with fresh parsley before serving.

Notes

For best results, let the chicken marinate in spices before cooking. If you prefer heat, add red pepper flakes. Experiment with ingredient substitutions to suit your family's preferences.
