Dough and Filling

  • 1 package refrigerated crescent roll dough The shortcut here—no one has time to make dough from scratch!
  • 1 cup fresh spinach, chopped A power-packed leafy green that’s not only good for you.
  • 1 cup feta cheese, crumbled Creamy, tangy cheese that adds depth to the rolls.
  • 1/2 cup sun-dried tomatoes, chopped Adds sweet and savory balance to the filling.
  • 1 each egg (for egg wash) For golden sheen on top, making your rolls look gourmet.
  • Salt and pepper to taste Adjust to your palate.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix chopped spinach, feta cheese, and sun-dried tomatoes. Season with salt and pepper.
  • Unroll crescent roll dough and separate it into triangles.
  • At the wide end of each triangle, place a generous spoonful of the filling.
  • Starting from the wide end, roll each triangle up to the tip.
  • Line a baking sheet with parchment paper and place the rolls on it with some space between.
  • Beat the egg and brush it over the tops of the rolls.
  • Bake in the preheated oven for 12-15 minutes or until golden brown.
  • Allow to cool slightly and serve warm.

Notes

These rolls are perfect for meal prep! Assemble ahead of time without baking and freeze; when ready to bake, thaw and bake as directed.
