  • 1 pound large shrimp, peeled and deveined The star of our dish! Use large shrimp for best results.
  • 1 cup orzo pasta Its tiny, rice-like shape holds onto sauce well.
  • 3 tablespoons olive oil, divided Good quality olive oil elevates the dish.
  • 4 cloves garlic, minced Freshly minced for best flavor.
  • 2 lemons zest and juice Fresh lemon adds a refreshing zip.
  • 1 cup chicken broth Enhances the flavor of the dish.
  • 1/4 cup white wine (optional) Use more chicken broth if omitted.
  • 1/4 teaspoon crushed red pepper flakes Adjust to taste for spice.
  • to taste Salt and black pepper For seasoning.
  • 2 cups baby spinach Sneaks in a green punch.
  • 1/4 cup freshly grated Parmesan cheese Adds creaminess to the final dish.
  • 2 tablespoons fresh parsley, chopped For garnish.

Instructions
 

Cooking Steps

  • Bring a large pot of salted water to a rolling boil and carefully stir in orzo. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add shrimp in a single layer and cook for 2-3 minutes on each side until pink and cooked through. Remove and set aside.
  • Using the same skillet, add the remaining tablespoon of olive oil. Sauté minced garlic for about 1-2 minutes until fragrant, being careful not to burn.
  • Stir in lemon zest, juice, chicken broth, and white wine (if using). Scrape up any brown bits from the pan and bring to a simmer. Season with red pepper, salt, and pepper to taste.
  • Add cooked orzo and baby spinach to the skillet, stirring gently until the spinach wilts. This should take about a minute.
  • Reintroduce the shrimp to the skillet and mix everything until warmed through.
  • Sprinkle with Parmesan and chopped parsley, then serve immediately with lemon wedges.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stove, adding a splash of water or broth as needed.
