Ingredients
  

Main Ingredients

  • 2 whole whole oranges Use organic if possible.
  • 4 large eggs
  • 1 cup sugar
  • 1/2 cup olive oil Can replace with coconut oil for a twist.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour Can be substituted with gluten-free flour.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch cake pan with olive oil and sprinkle flour to prevent sticking.
  • Boil the oranges in a pot covered with water for 30 minutes until soft.
  • Once cooled, cut oranges into quarters and remove any seeds.
  • Blend the orange quarters into a smooth puree.
  • In a mixing bowl, whisk together eggs and sugar until light and fluffy.
  • Mix in the olive oil and orange puree until well combined.
  • In another bowl, whisk flour, baking powder, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Pour the batter into the prepared pan and smooth the top.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This cake pairs wonderfully with whipped cream or powdered sugar. It's also fantastic served with a cup of tea or coffee. Keep leftovers at room temperature for up to 3 days, or freeze for up to 3 months.
