  • 1 tablespoon olive oil For cooking.

For the bowl

  • 1 can black beans, drained and rinsed Rich in protein and fiber.
  • 1 cup corn, canned or frozen Adds sweetness and texture.
  • 1 cup cooked rice or quinoa Base for the bowl.
  • 1 avocado diced Adds creaminess and healthy fats.
  • 1 cup Greek yogurt Creamy and high in protein.

Instructions
 

Cooking the Chicken

  • Heat the olive oil in a skillet over medium heat.
  • Season chicken with salt and pepper and place in the skillet.
  • Cook for 6-7 minutes on each side until golden brown.
  • Remove from heat and let rest to retain juices.

Making the Chipotle Sauce

  • In a bowl, mix Greek yogurt and chipotle sauce until well combined.

Assembling the Bowl

  • Slice the rested chicken and layer the bowl starting with rice/quinoa.
  • Add black beans, corn, sliced chicken, and diced avocado.
  • Drizzle with the chipotle sauce and sprinkle with chopped cilantro.
